Shanxi Vinegar Soul

Locals call vinegar the "soul of Shanxi" — aged for three to five years in clay jars, drunk by the spoonful and splashed onto noodles. Try a vinegar tasting at Shuita Lao Chen.

Hand-Pulled Noodle Mastery

Shanxi claims over 280 named noodle dishes — knife-shaved daoxiao mian, oat youmian, cat's-ear maoer duo and dough sheets pulled paper-thin in front of you.

Jin Merchants Banking Legacy

From the 17th to 19th centuries Shanxi merchants operated China's first national banking network. The Rishengchang museum in Pingyao occupies the original 1823 head office.

Shanxi Opera (Jin Opera)

A 500-year-old regional opera form sung in the loess plateau dialect — high-pitched, percussive and a staple of village temple fairs.

Cliff-Carved Buddhism

From Yungang to Tianlong Shan, Shanxi's sandstone cliffs are riddled with thousands of carved Buddhist niches — a tradition that ran for nearly 1,000 years.
