Hui Muslim Heritage

Hand-Stretched Lamb Noodles
Ningxia is famous for "shou zhua lamb" — boiled lamb chunks eaten by hand with garlic and salt — and for hand-pulled noodles in clear lamb-bone broth, the best in northwest China.

From 1038–1227 the Tangut Western Xia kingdom rivaled Song China in wealth and culture, then was so thoroughly erased by the Mongols that even its written script was forgotten until 20th-century scholarship.
